Białe Skały Winery
The Białe Skały winery begins on the hotel grounds. The name is derived from the limestone cliffs surrounding us. Water is sourced from an underground lake located beneath the hotel hill. Most importantly, the sun regularly shines on the Jura. Both the hotel and the winery have the same founder - Andrzej Wuczyński. Białe Skały wines have been on sale since 2022. The winery now covers 5 hectares of land (in several locations) and produces 7 types of wine using natural methods.
Winery 511 is the highest vineyard in the Jura! On over 5 hectares of fertile limestone soil, two plantations grow grape varieties such as Pinot Noir, Chardonnay, Solaris, Johanniter, Muscaris, Regent, and Cabernet Cortis. They are favored by limestone rocks and underground sources of crystalline water. Try white, red, or rosé wines in the hotel or in our shop.
Sunny weather, gentle slopes, picturesque undulating landscapes of the Jura, and an altitude of 400-500 meters above sea level contribute to obtaining full-flavored grapes, creating an analogy to the famous Tuscan landscapes. Try our wines in the restaurant, order a basket and picnic in the nearby vineyard, indulge in the wine ritual at the SPA.

Our vineyard is the perfect place for walks and picnics. Rent a bike from the hotel rental and ride along the newly paved bike path straight to the second part of the 511 vineyard in the village of Piecki. Try wines from previous years or confidently reach for young or still-developing wines, capturing the taste of fermentation.
World-class wines and excellent atmosphere. The club is a meeting place dedicated to selected world wine regions and wine types. It also offers access to private tastings with sommeliers and representatives of our wineries, dinners, lectures, and events such as the annual picnic in our vineyard. Club meetings are available to everyone - after the first visit, everyone becomes a member and is guaranteed free participation in subsequent editions.
Try our wines made from the hotel's own and local crops. We offer Jurassic wines produced in a completely natural way, with care for the environment and surroundings.
While staying at Poziom 511, you should not miss a visit to the highest vineyard in the Jura region. Located on the hotel grounds, the Białe Skały Vineyard takes its name from the surrounding limestone rock formations.

We regularly organize wine tastings, during which our guests have the opportunity to sample carefully selected wines produced on-site in the Jura region.The tastings are led by experienced sommeliers who are happy to share their knowledge about different grape varieties, production techniques, and the secrets of wine tasting.

Appropriate clothing – visiting the vineyard is not only about tasting, but also walking among the vines, so we recommend comfortable footwear and weather-appropriate clothing. Please remember that our vineyards are located outdoors, so suitable attire is essential to fully enjoy the experience regardless of weather conditions.

Be prepared to listen to fascinating stories about the history of the vineyard, the winemaking process, and the characteristics of different grape varieties. At the Białe Skały Vineyard, we cultivate eight unique grape varieties, each producing wines with a distinct taste and aroma. This is a true pride of our vineyard and the entire region.
Solaris
Solaris is a popular grape variety in Polish vineyards, known for producing light and versatile wines. Jura Solaris wines stand out from others, often regarded as among the best in Poland.
Johanniter
Johanniter, closely related to Riesling, produces wines with a full-bodied taste and notes of pear and green apple. It is appreciated for its freshness and its delicate yet distinctive flavour profile.
Muscaris
Muscaris is a grape variety characterized by a pleasant muscat flavour. Its wines are intense and rich in aromas, making them especially appealing to lovers of expressive wines.
Regent
From Regent grapes, we produce high-quality red wines. This variety performs exceptionally well in our climate, offering wines with a deep colour and a rich flavour bouquet.
Seyval Blanc
Seyval Blanc thrives in cool climates and is ideally suited for the production of sparkling wines. Its wines are characterized by freshness and distinct acidity, making them an excellent choice for summer days.
Pinot Noir
Pinot Noir is a noble but demanding grape variety. In our vineyard, grown on limestone soils and in a cooler climate, it produces wines of exceptional quality, appreciated in many prestigious wine competitions. Pinot Noir 2021 was awarded the Gold Cork in 2023 at the Polish Corks Wine Competition at SPOT in Poznań. In 2024, Pinot Noir 2022 received a bronze medal at the Winona Medal Wine Competition.
Chardonnay
Chardonnay, originating from France’s Burgundy region, gains additional acidity in our Jura climate, resulting in light, refreshing, and mineral wines. It is an ideal choice for any occasion. The Chardonnay from Białe Skały, with its distinctive texture, best reflects the character of our Jura terroir.
Cabernet Cortis
We also cultivate Cabernet Cortis in our vineyard, a cross between Cabernet Sauvignon and Solaris. Wines from this grape variety feature pronounced tannins and distinctive herbal aromas, satisfying even the most demanding connoisseurs.
Our vineyard is the result of passion and hard work. In vine cultivation, we use ecological methods that ensure the highest quality of our wines. We make sure that each vine has optimal growing conditions – from proper sunlight exposure, through suitable soil, to careful and attentive care.
