Taste. Wine from Białe Skały vineyard, local cheeses, fish, and meat. Experience the aroma of famous Jurassic herbs, including our favorite oregano and thyme. Try preserves prepared according to traditional recipes of the local residents of the Jura region.
Our cuisine also pays homage to the French Jura, from where we borrow some wines and traditional ideas of international cuisine. We combine products from local suppliers, local herbs, and compose a menu that draws its uniqueness from our surroundings.

"The menu of this local restaurant perfectly fits the culinary color of the region. It is based on carefully selected products from local farmers. Inspired by the flavors of the region, the dishes that are served to guests are presented in a contemporary interpretation. Each dish is beautifully composed, light, with a large amount of vegetables - just right to combine a regenerative stay at the spa with a delicious diet."

LOCAL, DELICIOUS
We source smoked trout and Jurassic sturgeon from Mr. Jan Grzanka from Cieślin, our favorite herb - thyme, we collect ourselves from nearby meadows and rocks, then extensively use it in our kitchen. You can find it in the Macierzanka cocktail, in the snails from Sakowski, and in some desserts. The jam made from local blueberries - cranberries was created based on the founder's family recipe.
Restaurant 511 is based on fresh seasonal products from local suppliers. The way they are produced is as important to us as the taste itself.
